Invitation-Only: From Algorithm to Aisle: AI in Food R&D, Claims, and Consumer Interfaces

Across R&D, safety, logistics, and retail, AI is already used for multi-omic ingredient discovery, formulation and process optimization, traceability, and dynamic pricing. Simultaneously, consumer apps are deploying “AI-personalized” nutrition based on wearables — developments that can ultimately shape diet quality and health behaviors.
In this invitation-only webinar, Professor Hayley Young will present a preliminary behavioral taxonomy of AI in the food system. This framework was developed from a targeted review of recent mapping work (e.g., FSA/RAND), a structured scan of real-world AI applications (from optical sorters to biofeedback-based diet platforms), and a synthesis of behavioral science on dark patterns and consumer vulnerability.
The taxonomy distinguishes three critical layers:
1. Technical AI Use: Mapping applications across the value chain.
2. Communication & Claims: Distinguishing technical disclosures from potentially misleading “AI-washing.”
3. Choice Architecture: Identifying AI-mediated interfaces, including emerging “algorithmic biofeedback” patterns where physiological data are monetized through ongoing prompts.
This session is exploratory and collaborative. It is aimed at experts in Food R&D, Public Health, Regulation, and Data Science.
