Environmental Controls for Food Safety: Managing Outside the Box

Microbial contamination in and around the food processing environment can influence the safety and quality of food. While food industries have cleaning and disinfecting protocols in place to manage resident and transient bacteria within the designated “clean” production and processing facilities, many food safety plans do not address other areas outside of these environments, such as outside areas, roofs, parking lots, and non-processing areas. In this session, invited speakers will highlight novel strategies for identifying and managing outside pressures on clean food production facilities to improve food quality and safety.
