AI in Food, Nutrition and Health: Technologies, Use, Opportunities and Challenges

The 2024 Canadian Nutrition Society’s Pre-Conference Food for Health Workshop examined the evolving role of Artificial Intelligence (AI) in food, nutrition and health. Through the lens of food and nutrition researchers, healthcare, agriculture and industry, this workshop will help to form an understanding of what AI means within our varying sub-sectors, including an exploration of the opportunities, challenges, risks and limitations of AI in our field. The agenda has been designed to be highly practical with real-life examples of how AI is being used to advance knowledge and practice of the complex relationships among food, nutrition and health including, but not limited to, re-identification of patient data, race/sex bias in training data sets, and ethical considerations. There was an interactive educational event with audience Q&A throughout the day, which culminated in an engaging panel discussion.
