Edmund developed a database of global regulatory limits for heavy metals for select commodities that included incidents of non-compliance and outcomes. Edmund also examined natural variability in heavy metal concentrations in key commodities as a function of global production regions. To learn more please click here.

A metal dietary exposure screening tool (MDEST) was previously developed by the IAFNS Food and Chemical Safety Committee to assist with rapid risk assessment of metals in foods. The tool allows data input for amounts of lead, cadmium, arsenic, chromium, and mercury and generates average exposure levels that could aid in risk management and decision-making. This project will update the MDEST with new exposure limits for select heavy metals and integrate the new levels with updated consumption data to generate new screening-level exposure estimates.

Poster presentation at the 2020 Society of Toxicology (SOT) Annual Meeting
This project focuses on the application of read across approaches for food related chemicals in ToxCast to understand their potential use in food safety assessment. This work was presented at the 2017 American Society for Cellular and Computational Toxicology Annual Meeting.
The ToxCast program has generated a lot of in vitro high throughput screening (HTS) data, however, interpretation and use of the ToxCast data such as for safety assessment of food related compounds remains undetermined. The IAFNS 2016 Summer Fellow conducted case studies using the Risk21 approach to better understand the ToxCast data for food-relevant chemicals and its potential use in chemical safety assessments by comparison with traditional toxicology studies.
