New Protein Digestibility Measures

Given the shift in the North American food supply from primarily animal to plant protein sources, the IAFNS Protein Committee is addressing protein quality from a North America perspective. This includes motivating food manufacturers to address protein quality by expanding the use of affordable, feasible, analytic testing methods. Protein quality has not been an issue in North America populations in the recent past due to the quantity and quality of protein consumed. However, as food sources shift, quality of protein may become a more important consumer decision factor in their individual choice of foods. In the long term, the goal of this effort is to unify support from decision-makers on a validated, practical in vitro approach to measuring protein digestibility as a step in determining protein quality for use in formulating and labeling food for the North America population.
